Coconut, Persimmon, and Black Sesame Seed Pancakes

When I first moved to the UK half-my-life-ago I discovered that they had this amazing day called Pancake Day. I remember writing to my mother about this astonishing event - a whole day dedicated to pancakes. I wondered if there might also be a brownie day, a cake day.... This year I've been manipulating my recipes a bit and have come upon this winner.  Great for Pancake Day or dessert any day of the year!

Pancakes:

1 c buckwheat flour
2 Tbls coconut flour
2 Tbls sesame flour
1 tsp baking powder
1 Tbls black sesame seeds
1 Tbls coconut sugar
1/4 tsp pink Himalayan salt
2 c coconut milk
2 eggs
1 Tbls melted coconut oil

Filling:

Chopped ripe persimmon
coconut flakes
black sesame seeds
Coyo or other coconut yogurt

Mix together all dry ingredients. Beat egg into milk and then stir in oil. Gently stir wet ingredients into dry, taking care not to over beat. The batter should be fairly thin. Spray or melt a tiny bit of coconut oil in your crepe pan. Pour approx. 1/3 c batter in pan and swirl around until pan is covered. When pancake is just starting to brown at the edges flip it and cook for 1 minute longer.  Serve filled with coconut yogurt, chopped persimmon, coconut flakes and black sesame seeds.
